"I trained with the greatest chefs of the time: Troisgros, Chapel, Haenerlin, Girardet and Bocuse... Then with my grandfather, Raymond Thuilier. What I learned from all of them was respect for the ingredients, as well as discipline and imagination. My cuisine is traditional: well-rooted in the Provençal soil, where ingredients are given pride of place and the trimmings do not conceal the essential. I am particularly proud of the vegetable menu, which features certain products grown in my organic vegetable garden."
