The estate covers eighty hectares of vines, set in an environment of olive groves, garrigue and forests. This natural balance contributes to the vineyard's identity and growing conditions.
Grape varieties grown include Cinsault, Grenache, Mourvèdre and Syrah for red and rosé wines, and Rolle, Semillon, Viognier and Sauvignon for whites. The vines are planted on sandy-clay soils mixed with quartz pebbles, benefiting from regular sunshine.
The estate is located in an area renowned for its rich flora and fauna, classified Natura 2000. This natural setting contributes to the quality of the terroir and the characteristics of the wines produced here.
At Château Saint Julien d'Aille, production methods combine modern techniques with traditional practices. The vineyard is cultivated according to the Terra Vitis label, and a large part of the harvest is carried out and sorted by hand to select the highest-quality grapes.
Vinification is based on the principle of gravity, limiting handling. After de-stemming, the grapes are placed in stainless steel truncated-cone tanks. For red wines, pigeage (punching down of the cap) is carried out throughout fermentation to extract the grape's compounds.
For rosés and whites, temperature control and the use of pneumatic presses help preserve aromas. The wines are then aged on their lees to bring out their roundness.
The estate also boasts a modern bottling line, ensuring controlled hygiene conditions and precise monitoring at every stage, from filling to temperature-controlled storage.
