Domaine de Lauzières
Domaine de Lauzières traces its origins back to the 16th century, in a context marked by the history of the Alpilles.
Rediscovered in 1992 by Gérard Pillon and his partner, the estate was then restructured to revive its viticultural potential.
In 2011, Christophe Pillon took over the estate and continued its development, with an approach focused on the evolution of the estate and the enhancement of its terroir.
Christophe Pillon continues to develop the estate by strengthening his commitment to organic and biodynamic farming, while modernizing the facilities in keeping with tradition.
Between 2013 and 2018, the cellars and winery were completely renovated to optimize winemaking conditions.
Since 2015, the estate has been certified Demeter, the benchmark label for biodynamic viticulture, guaranteeing a respectful approach to natural balances and terroir.
Harvesting is carried out manually and at night, to preserve the freshness of the grapes. Once harvested, the grapes are quickly transported to the cellar and carefully sorted.
The whites are pressed in whole bunches to preserve their aromatic expression. The reds are destemmed and vinified as whole grapes, with a vatting period that can last several weeks. Rosés are obtained by the natural flow of juice, without mechanical pressure.
Fermentations are carried out with indigenous yeasts, and are carefully monitored throughout the process.
The wines are then aged for several months on fine lees, in stainless steel vats or amphorae, depending on the cuvée.
