The Sainte-Marie vineyard extends over 40 hectares of south-facing, sandy soil composed of schist, micaschist and quartz. The gentle slopes and Mediterranean climate, hot and dry in summer with cool nights, favor balanced ripening of the grapes.
Vegetation cover is maintained for as long as possible, with natural upkeep ensured in particular by the passage of sheep.
The vineyard is integrated into a wooded environment of cork oak, pine and arbutus, contributing to a rich biodiversity. The estate is certified to level 3 of High Environmental Value.
Over twelve grape varieties are grown, including grenache, cinsault, syrah, cabernet sauvignon, mourvèdre, rolle and ugni blanc, with an average vine age of around 35 years.
Harvesting takes place at night, between 3 a.m. and 8 a.m., to preserve the grapes' natural freshness and aromatic qualities.
Vinification takes place in several cellars, each adapted to a specific type of wine. The main cellar is equipped with temperature-controlled stainless steel vats, enabling precise temperature control and a cold stabulation phase.
A concrete cellar is dedicated to maturing red wines, offering stable conditions for prolonged rest. Certain specific cuvées are matured in oak barrels in separate areas.
Bottling is carried out on site, with controlled use of sulfites. The entire process is designed to preserve the quality and expression of the wines.
