Château la Canorgue
Located in the heart of the Luberon Regional Nature Park, this family-run estate has been passed down for over two centuries.
The vineyard has been farmed organically since the 1970s, a pioneering approach in the region. This continuity has enabled us to develop a structured production of wines expressing the character of the terroir.
Today, the vineyard is managed by the new generation, with a view to passing on and maintaining the practices already in place.
The estate's wines are regularly recognized, testifying to the consistency of the work carried out.
The vinification of the reds is based on a precise selection of the harvest date, determined by berry tasting. After sorting and partial or total destemming, depending on the vintage, the grapes are vinified by variety and plot. A pre-fermentation phase precedes alcoholic fermentation, allowing gradual extraction of the tannins. Long, controlled vatting takes place over several weeks, with daily monitoring.
Ageing then takes place according to the desired profile: in foudre, concrete vats or stainless steel, to adapt the structure and preserve the balance of the wines.
Rosés are made from grapes harvested when ripe, and pressed quickly to limit color extraction. Work on the lees brings roundness and complexity, before fermentation at low temperature.
The whites follow a similar approach, with direct pressing and fermentation in vats or wood, depending on the cuvée. Ageing on fine lees completes the process, adding texture and depth.
Some specific cuvées, such as rosés de saignée, are produced by partial maceration before fermentation, offering more structured profiles.
