Noves remains known for its most famous resident, Laure de Noves, who, in the 14th century, was the object of the love of the Florentine poet Petrarch. The latter, who fell madly in love with the beauty, dedicated many sonnets to her. This love remained platonic because Laure de Noves was married and insensitive to the charm of the poet.
The village has kept some traces of its medieval past: its ramparts erected between the 12th and 14th centuries with the Porte d' Aurose , the Porte d'Agel and the Porte de l'Horloge, surmounted by a belfry from the 17th century. th century.
