The bistronomic counterpart to Villa Salone, Atelier Salone is led by chef Alexandre Lechêne, whose experience includes Aux Lyonnais and Louis XV in Monaco, and a former Michelin-starred restaurant in Saint-Véran in the Hautes-Alpes.
The menu reflects a seasonal and product-led approach, with dishes such as organic perfect egg with squash and truffle, a classic vol-au-vent, and a chestnut and blackcurrant Mont Blanc served with chestnut ice cream.
The setting combines the character of an early twentieth-century house with contemporary elements, creating a space that balances heritage and modern design.
Between the Alpilles, the Camargue and the Crau plain, Alexandre Lechêne presents a cuisine rooted in the Provençal landscape, where wild herbs are used to bring depth and character to carefully selected ingredients.
From the Hautes-Alpes to the Mediterranean coast, he works closely with a network of producers who supply fish, meat and vegetables according to the seasons. These relationships guide the structure of the menu and ensure consistency in sourcing.
His cooking reflects both Provence and the nearby Alpine influences, with a focus on clarity, balance and direct flavours.
