Chef Fanny Rey heads up the kitchen at this long-established inn, located next to the ring road and the city's historic ramparts. The dining room combines contemporary design with original elements, including a curved white ceiling, exposed stone walls and artwork by Francis Guerrier. Its cuisine follows the rhythm of the market, highlighting the produce of the Alpilles region. Tasting menus often focus on seafood and plant-based ingredients, bringing together the flavors of the Mediterranean and the surrounding countryside. Pastry chef Jonathan Wahid, his partner and former French pastry champion, is in charge of the dessert menu. His work focuses on seasonal fruits from the south of France, notably figs and strawberries, prepared with precision and balance.
This two-Michelin-starred restaurant is clearly inspired by its immediate surroundings. The kitchen works in close collaboration with the local landscape. Orchards, apiaries, pastures and vegetable gardens contribute their ingredients and ideas. The surrounding hills and a lake are home to a range of wild herbs, berries and plants that form part of the restaurant's wider ecosystem. The sea also plays an important role in the menu. Shellfish, seaweed and mineral elements are used to complement products grown on land. This approach brings together two environments that may seem distinct at first glance: the Mediterranean and the Alpilles countryside. Wild harvesting is at the heart of the cooking philosophy.
