Domaine Fontchêne
The Alpilles > Saint-Rémy-de-Provence
The estate's work is based on a strong attachment to the terroir and a desire to preserve its balance.
Vineyard management is based on precise practices designed to obtain healthy grapes at optimum ripeness. The work begins in winter with gentle pruning, inspired by specialized methods, to regulate production and preserve the longevity of the vines.
The whole approach favors attentive viticulture, where every intervention is designed to best support the expression of the terroir and the quality of the grapes.
The grapes are harvested by hand, in crates to preserve their integrity.
Each grape variety and plot of land is vinified separately, allowing us to precisely distinguish the characteristics of each terroir.
Vinification is mainly carried out in stainless steel vats for certain ranges, while some cuvées benefit from partial aging in barrels, with a limited proportion of new wood to preserve the wine's balance.
After fermentation, the wine is aged on fine lees, including stirring, to bring structure and aromatic complexity.
The whole process is based on a precise approach, aimed at preserving the natural expression of grapes and terroir.
