Domaine du Clos d'Alari

Clos d'Alari extends over 6 hectares of vines situated at an altitude of around 300 metres, on a clay-limestone terroir. Part of the vineyard is classified as AOC, the rest as IGP.
The estate is farmed organically, with particular attention paid to soil life: no pesticides or herbicides, natural grassing and the use of green manure.
The grapes are harvested by hand, at night, depending on the maturity of the plots. Vinification is minimal, with the use of indigenous yeasts and very little sulfur added at bottling.
The winery is equipped with stainless-steel vats, complemented by oak and acacia barrels, as well as an amphora, allowing for different types of ageing. Harvesting takes place over several weeks, depending on the grape variety.
The estate is certified organic, with herbicide- and pesticide-free viticulture and attention to soil balance through the use of green manure and organic soil improvers.
Yields are controlled, notably through practices such as green harvesting, to encourage grape concentration.
In the cellar, the approach is low-interventionist, with modern equipment enabling precise work: stainless steel vats, pneumatic press, destemmer and barrel cellar for certain maturations.
Vinification choices remain deliberately simple and adapted to each cuvée: de-stemming, maceration time, pressing, type of container or blend. The whole process is based on rigorous monitoring and strict hygiene, essential in a context of low sulfur use.
Harvesting is predominantly done by hand, with the aim of maximizing the natural expression of grapes and terroir.
