The main courses are organised around seafood, meat and specialities, with grilled fish served with a garnish of choice and virgin sauce, plus dishes such as citrus sea bream fillet heart with roasted avocado, fregola sarda paella with mussels, prawns, squid and chicken, and bouillabaisse with red mullet, monkfish, pagre and sea bass. Local-style garnishes, including sesame-roasted aubergines and summer truffle panisses, add a sharper edge to the plate.
