The chef's menu reflects the ingredients and landscapes of the Alpilles region. Seasonal fruits and vegetables are selected from local market gardeners, allowing the menu to follow the rhythm of regional produce. Most of the herbs used in the kitchen come from the restaurant's own garden, while the olives are harvested on the estate. The olive oil that accompanies many dishes is produced by Moulin Castelas, in Les Baux-de-Provence, using fruit from the estate. Each dish showcases the flavors commonly associated with southern Provence, combining local produce with meticulous preparation.
