Surrounded by greenery, this 16th-century bastide overlooks the Massif des Maures and the village of Les Arcs-sur-Argens. The setting reflects the rural character of the Var and offers a peaceful environment for the restaurant.

Chef Sébastien Sanjou, originally from Tarbes in southwest France, established his kitchen here after initial experience working alongside chefs such as Jacques Maximin and Alain Ducasse. Over the years, he has forged close links with local producers, notably market gardener Philippe Auda, whose vegetables regularly feature on the menu.

Seasonal ingredients are the basis of his cuisine. A dish of ripe tomatoes served with basil sorbet, burrata, olive oil and Baume de Bouteville vinegar illustrates this approach, where the emphasis is on the ingredient itself.

Each plate showcases carefully sourced products, prepared with precision and respect for their natural flavor.

It was in February two thousand and two that chef Sébastien Sanjou discovered this house. Originally from south-west France and deeply attached to his roots, he arrived in the Var with the intention of making his contribution to a place that had already existed for centuries. Over the years, he and his team have developed the restaurant into what it is today. The house combines fine cuisine with an atmosphere that values hospitality and the shared pleasure of good food.

The terrace is set in a park of mature oaks and pines. From here, guests can contemplate the medieval village of Les Arcs and the Massif des Maures. It's a quiet spot for al fresco dining, especially in the warmer months. Sébastien Sanjou hails from Bigorre in southwest France. His family has worked in the culinary trades for five generations, and he continues this tradition today. Guided by his father's training and years of experience, he approaches cooking with great rigor and curiosity. His goal remains the same: to refine his work every day and share his passion for cooking through the dishes he creates.

The Mediterranean landscape that surrounds the restaurant is the starting point for the menu. Working closely with his team, the chef selects ingredients from local producers and suppliers throughout the year. This meticulous sourcing enables the kitchen to present a contemporary cuisine that respects the regional character and the people who produce the ingredients. Each dish begins with these products, which are then prepared with attention to detail and balance.
