In the Luberon countryside, Domaine de Fontenille occupies a 17th-century bastide surrounded by vineyards and gardens with century-old trees. Located around forty-five minutes from Aix-en-Provence, this Relais & Châteaux property has been welcoming guests since two thousand and sixteen, and was the first address in the Fontenille Collection.
Amélie's cuisine is inspired by the produce of the Luberon and surrounding villages. The kitchen works with fresh ingredients sourced from local producers located within a radius of twenty to fifty kilometers from the estate. For example, tomatoes from Domaine de la Corée in Lourmarin, olive oils from Léo Coupat in Bastide du Laval, chickpea flour and petit épeautre from Frédéric Ratto in Cucuron, and meats supplied by Stéphane Ortiz. These ingredients guide a menu that evolves with the seasons and the availability of local produce.
