Le Jas
Aix-en-Provence > La Roque-d'Anthéron
Just a few meters from the church in La Roque-d'Anthéron, this restaurant is housed in an old dry-stone sheepfold, with vaulted rooms and a terrace open in fine weather. Chef Émeric Corbon, who trained with the likes of Michel Kayser and Édouard Loubet, offers Provencal-inspired cuisine based on seasonal produce. Dishes include eggplant papeton with tomato and basil, or roast squab in a variety of preparations with peas. The result is a structured cuisine, focused on the product and mastery of cooking techniques, in a setting rooted in the local heritage.
Le Jas offers local cuisine inspired by Provence and the Mediterranean, using fresh produce selected from local producers.
The menu features traditional recipes, built around the seasons and local ingredients.
The result is a simple, well-structured cuisine, faithful to Provençal principles, in a setting suited to the discovery of regional flavors.
