Located in the medieval village of Grimaud, on the Gulf of Saint-Tropez, Les Santons has been part of the local gastronomic scene since nineteen sixty-two. Founded by Claude Girard and his wife, the restaurant quickly became a well-known address in the region, eventually earning two Michelin stars and establishing a reputation based on tradition and meticulous cuisine.
Today, the restaurant remains a family establishment. Stéphanie, daughter of the founders, oversees the dining room as maître d'hôtel and sommelier. Having grown up in the restaurant, she now perpetuates the standards of service and attention to detail set by her parents.
Since 2007, the kitchen has been run by her husband, chef Julien Allègre. Trained at the Montauban hotel school and then in several Michelin-starred restaurants, including Michel Sarran in Toulouse, Lasserre in Paris and Le Grand Monarque in Chartres, he also worked alongside Claude Girard as sous-chef before taking charge of the kitchen.
S Chef Allègre's cuisine focuses on flavors and seasonal produce. The menu highlights ingredients sourced from regional suppliers, many of whom have been working with the restaurant for decades. This approach reflects a commitment to short supply chains and long-standing relationships with producers.
Guests are welcomed into a Provencal house that reflects the character of the village. The terrace brings natural light to the meal, while inside, a lounge with fireplace creates a more intimate atmosphere. Les Santons remains a place shaped by family continuity, regional ingredients and attentive hospitality in the Gulf of Saint-Tropez.
