Vinification is based on rigorous grape selection and gravity-fed reception, to preserve grape integrity. The combined use of concrete and stainless steel vats and wooden containers enables precise adaptation to each cuvée.
Temperature control, pre-fermentation phases and ageing on lees all contribute to the precision of the wines, while the parcel-by-parcel approach makes the most of the specific characteristics of each terroir.
