Domaine du Chat Blanc
Saint-Didier
The estate favors environmentally-friendly practices, excluding the use of chemical weedkillers in favor of mechanical tillage.
Fertilization is based on organic inputs and the use of green manures, to preserve soil structure and balance.
The whole approach is designed to support the natural functioning of the vineyard while maintaining crop quality.
Situated between Mont Ventoux and the Monts du Vaucluse, this estate benefits from an unspoilt natural environment, in an area renowned for its biodiversity.
The vineyard benefits from a microclimate marked by local influences, bringing freshness and balance to the grapes. The grapes are harvested by hand, at the coolest times of the day, after careful monitoring of ripeness.
Vinification is organic, with limited intervention to preserve the expression of the terroir. The use of sulfur is reduced to the strict minimum, to ensure the stability and precision of the wines.
The overall aim is to produce balanced wines that reflect the characteristics of the site and natural conditions.
