For over fifteen years, Master Chef of France Jean-Luc Rabanel has focused his cooking on vegetables. He calls this approach "Greenstronomie", a style of cooking in which vegetable ingredients form the basis of the menu. Vegetables, roots, leaves, herbs and edible flowers take center stage in his dishes. Rather than serving as mere accompaniments, these ingredients shape the structure and flavor of each dish.
