In this 18th-century bastide, chef Matthieu Derible offers structured gastronomic cuisine, following in the footsteps of Matthieu Dupuis Baumal.
The cuisine combines Provençal influences with more contemporary touches, with a focus on precise flavor and balance. Dishes include muge with mild spices, scallops with pomelo, and a combination of red mullet and veal strawberry with red wine fish soup.
Desserts follow the same line, such as a composition based on whisky and vanilla.
