Le Prieuré offers two distinct dining experiences within the same setting. At lunchtime, La Petite Table du Prieuré presents a lighter menu designed for a relaxed midday meal.

In the evening, the restaurant serves a Michelin-starred gastronomic menu focused on seasonal ingredients and southern flavours. Chef Christophe Chiavola leads the kitchen with an approach guided by instinct and careful technique.

For chef Christophe Chiavola, cooking is a form of expression. His aim is to present dishes that reflect his own style, combining precision, restraint and carefully balanced flavours.

His cuisine focuses on seasonal ingredients and draws inspiration from the surrounding region. Mediterranean products often appear on the menu, alongside subtle floral notes and a controlled level of acidity that brings structure to the dishes.

Several plates combine ingredients from land and sea, with combinations designed to highlight contrast in texture and flavour. Throughout the menu, particular attention is given to cooking methods, sauces and balance.

While introducing his own approach, chef Chiavola continues to respect the identity of Baumanière and its connection to Provence. Curious to see how these influences appear on the plate?

Le Prieuré Baumanière occupies a building with a long history. Before becoming a hotel, it was built in thirteen thirty-two as a livery, a residence used by cardinals during the papal period in nearby Avignon. The property belonged to Cardinal Arnaud de Via, nephew of Pope John XXII. Shortly before his death, he donated the building to a community of canons, who established a priory there. Over the years, the building has played a variety of roles. It then served as a boarding house for painters and artists, before being transformed into a hotel welcoming travelers to Villeneuve-lès-Avignon. RESTAURING THE BAUMANIÈRE To restore the Baumanière identity to the property, owners Jean-André and Geneviève Charial undertook a six-month renovation and interior refurbishment project. Le Prieuré Baumanière reopened in 2007 in the center of the medieval town of Villeneuve-lès-Avignon. The hotel is within walking distance of several historic sites linked to the region's papal history. Visitors can explore sites such as Fort Saint-André, La Chartreuse and the Collégiale Notre-Dame. A stroll through Villeneuve-lès-Avignon reveals layers of heritage shaped by the period when the papacy was based in neighboring Avignon.
