Brothers Gaël and Mickaël Tourteaux followed the same career path from an early age. They studied at the same hotel school in Nice and then worked together at Le Negresco when Alain Llorca was head chef. Their common goal was to create a restaurant focused on quality ingredients and independent creativity.
This partnership led to the opening of Flaveur, their restaurant in Nice. Their work was rewarded with a Michelin star in 2011, followed by a second star in 2018.
Their cuisine combines local produce with influences of international spices and flavors. Rather than choosing between regional ingredients and global inspiration, the chefs bring the two together in a single dish. For example, red scorpion fish from the Nice coast is paired with a fish broth seasoned with vadouvan, an Indian spice blend.
The result is a style of cooking defined by precision, balanced flavors and thoughtful combinations of ingredients.
Located in the center of Nice near Avenue Jean Médecin and Place Masséna, presents a cuisine shaped by flavor, aroma and texture. The restaurant explores how ingredients interact with the palate, combining taste, aroma and visual presentation. The menu is based on local produce and regional specialties, often combined with spices and techniques from other parts of the world. These combinations create dishes that balance Mediterranean ingredients with global influences. The cuisine evolves with the seasons, depending on the produce available and new ideas from the kitchen. The dining room is bright and decorated with contemporary artwork and carefully chosen tableware. In 2018, the restaurant was awarded two Michelin stars and four toques by Gault & Millau, recognizing the work of this Côte d'Azur family restaurant.
