Situated between the port of Nice and the hill of the Château, this restaurant offers cuisine combining Colombian and Italian influences, led by chefs Carlos and Daniele. The menu features flame-grilled, plancha and parrilla dishes. Dishes include grilled octopus, braised veal chop and sardines with chimichurri. Ceviche, prepared with white fish, red onion, corn and sweet potato, completes the offering. The restaurant has a terrace and an interior room in terracotta tones, with an open kitchen where you can follow the preparations. The whole offers a coherent approach, focused on strong flavors and direct execution.
Colita is based on an approach centered on cooking with fire, a common thread running through the cuisine and the identity of the place. The project is spearheaded by two chefs, one Colombian, the other Italian, who combine their influences around ember, flame and oven cooking techniques.
The menu features dishes built around these methods, with a focus on precise cooking and intense flavors.
The result is a structured cuisine, where the product and the cooking take center stage, in a spirit of sharing and coherence.
