Belle de Mars
Set behind a wrought-iron gate in the Joliette district, this restaurant offers a restrained and carefully designed interior, with white walls, wooden flooring and simple furnishings. The open kitchen places the work of chef Michel Marini at the centre of the dining experience.
His cuisine is rooted in the Mediterranean and Provence, with a focus on clarity, balance and digestibility. Many dishes are finished with herbs foraged by the chef, adding a direct link to the surrounding landscape.
Each plate highlights precise and expressive flavours, with a measured approach to seasoning. Desserts follow the same direction, offering structured compositions with controlled sweetness.
After training with leading chefs in Paris and Marseille, followed by several years in the Luberon, the team chose to open Belle de Mars, which they describe as a small neighbourhood gastronomic restaurant.
From the beginning, they have worked alongside a close-knit team who share the same approach to cooking and hospitality. Nadège Bolcioni leads the dining room, while Alinka Gasparach supports the kitchen, ensuring consistency between service and cuisine.
