The chef buys daily from the market, choosing produce for its freshness, quality and seasonality. This attention to sourcing determines the direction of the cuisine. Chef Morisset's dishes often combine ingredients from land and sea in balanced, thoughtful preparations. The aim is to present flavors clearly, allowing the character of each product to remain at the center of the plate. Wines are chosen to accompany the dishes and support the overall structure of the meal.
At Le Figuier de Saint-Esprit, gastronomy is closely linked to the cultural life of Antibes. The restaurant has collaborated with the Antibes Juan-les-Pins Convention and Visitors Bureau to encourage visitors to discover the city's museums alongside its culinary scene. To mark the fiftieth anniversary of Pablo Picasso's death, the restaurant's customers were offered a pass to the city's museums. The pass gave access to several institutions, including the Musée Picasso, the Musée d'Archéologie, the Musée Peynet and the Musée du Dessin d'Humour, and was valid for seven days from its first use. The Antibes Juan-les-Pins tourist office also informed museum pass holders of the restaurant's offer, where the value of the pass could be deducted from the final bill. The initiative combines cultural visits with a meal reflecting French and Mediterranean cuisine, offering visitors a broader way to discover Antibes.
