Located in a renovated house overlooking the valley and perched village of Fayence, this family-run restaurant is run by Quentin and Hermance Joplet. The open kitchen is directly connected to the dining room and terrace, allowing guests to follow the rhythm of the cooking throughout the meal.
The terrace overlooks the surrounding countryside and fortified village, offering a clear view of the landscape that influences the menu.
The cuisine follows the seasons and relies on ingredients sourced from local markets. Dishes can include Mediterranean meagre with panisse and seasonal vegetables, or fig tart with almond cream and red fruit sorbet.
Room service is attentive and tailored to each table, guiding guests through a menu shaped by the flavors of Provence.
At Le Castellaras, the menu evolves throughout the year according to the seasons and Chef Quentin's ideas. Deeply rooted in the Fayence region, he draws inspiration from the local terroir to revisit traditional Provencal dishes. The kitchen works with fresh ingredients sourced from neighboring producers and the daily market. This approach allows the menu to keep pace with seasonal produce and regional supplies. Guests can discover the chef's cuisine through three tasting menus, each featuring a selection of dishes reflecting the flavors of Provence and the surrounding countryside.
