Le Belrose

Mediterranean cuisine overlooking the Gulf of Saint-Tropez
Set above the Gulf of Saint-Tropez, the restaurant at the Belrose offers wide views across the coastline. The terrace provides a clear vantage point over the sea, creating a calm setting for lunch or dinner.
Chef Jimmy Coutel leads the kitchen with a menu centred on Mediterranean ingredients and seasonal produce. His dishes combine seafood, vegetables and carefully selected meats through precise preparation and balanced flavours.
Examples include roasted crayfish served with seaweed butter, baby broad beans, lemon and charred leeks. Another dish features roasted sea bass accompanied by steamed morels, green peas and Colonnata bacon.
Each plate reflects the produce of the region and the chef’s attention to detail in both cooking and presentation.
Le Belrose has forged a reputation as one of the Côte d'Azur's leading gourmet addresses. Its cuisine reflects a close link with the surrounding region, drawing on local produce and Mediterranean ingredients. The menu features fish, carefully selected meats and vegetables supplied by local producers. These ingredients are prepared with respect for flavor and seasonality, presenting dishes that reflect both the coastline and the countryside around Saint-Tropez.
Guests can discover the cuisine's approach through two tasting menus. The Farigoule menu features four dishes that reflect regional traditions, while the Signature menu offers five dishes that introduce more varied combinations and techniques. Chef Coutel works closely with local producers, favoring short supply chains and seasonal produce. One example is the vegetarian dish Le Jardin de Sydney, made with vegetables grown by a local farmer named Sydney. This approach places the ingredient at the center of the dish, while supporting the region's agricultural traditions.
