La table de fanette
Fox-Amphoux
In 2014, Aimé, Fanette, also known as Stéphanie, Pascal and their son Morgan acquired a seventeenth-century farmhouse at the entrance to Fox-Amphoux, a village in the Provence Verte. Surrounded by an olive grove of around one thousand five hundred trees, the property was first opened as a guest table and quickly attracted visitors.
Encouraged by the response to Fanette’s cooking and Pascal’s hospitality, the family transformed the house into a restaurant in two thousand and eleven.
At La Table de Fanette, the family has chosen to preserve the welcoming character that first defined the place. Fanette prepares dishes based on ingredients sourced locally, allowing the menu to change regularly with the seasons.
At the beginning of the year, guests may begin with scrambled eggs prepared with truffles from the property. Starters may include semi-cooked foie gras served with pumpkin cake and a pumpkin emulsion, or a cream of Granny Smith apple with prawn tartare, pomegranate pearls and lime.
Main courses may include brandade of pollock served with parsnip purée and seaweed oil, or Iberian pork fillet accompanied by balsamic jus and seasonal vegetables.
A short pause may follow with a selection of cheeses, such as brie with truffle and goat’s cheese served with fig confit, before the dessert course. Options might include an apple and cep tart finished with cep caramel, or a white chocolate and raspberry frozen dessert served with mandarin coulis.
The dining room looks across the surrounding landscape, while service is overseen by Morgan. His father Pascal often shares stories about the truffles harvested on the property and the two dogs trained to find them.
