Les Bories gastronomic restaurant
Inspired by the traditional dry-stone huts called *bories*, once built by shepherds throughout the Luberon, this farmhouse is located on the road leading to the Sénanque Abbey. The architecture reflects these rural structures and blends naturally into the surrounding landscape.
The restaurant overlooks the garrigue typical of the region, while the gardens and grounds provide many of the ingredients used in the cooking. The menu focuses on Provençal cuisine, shaped by the produce of the Luberon region.
Regional ingredients feature in every dish, including Sisteron lamb, Mediterranean fish and locally grown fruit and vegetables. The result is a menu closely linked to the surrounding countryside and its agricultural traditions.
The restaurant presents a menu shaped by the traditions of French gastronomy, prepared with careful attention to ingredients and technique. The kitchen offers dishes designed to introduce diners to new flavor combinations while remaining rooted in classic culinary fundamentals. Each dish showcases seasonal produce and balanced preparation. Guests are invited to take the time to discover the restaurant's cuisine and the team's work in a setting dedicated to reflection.
