Bistrot école
Verdon and Haute-Provence > Esparron
Set in a former village school, this bistrot led by Grégory Brousse, previously chef at Le Mas de Peint, and his partner Alima Louange, focuses on a cuisine grounded in local produce.
Located in the centre of a hilltop wine-growing village, the restaurant features a terrace shaded by mulberry trees, offering a practical outdoor dining option.
The menu reflects a straightforward, product-led approach, with dishes such as stuffed courgette with small spelt and fresh goat’s cheese, or slow-cooked pork belly from Sainte-Victoire served with crushed potatoes.
In addition to a well-priced set menu, the restaurant highlights local wines and products, available both at the table and to take away.
The kitchen prioritises short supply chains, working closely with local producers, including those from the Pallières area. This approach ensures consistency in sourcing and a clear connection to the surrounding terroir.
Menus are updated regularly, often on a weekly basis, and evolve with the seasons to reflect produce at its best. Each dish is built around carefully selected ingredients, chosen for their freshness and quality.
The menu remains intentionally concise, typically offering four starters, three main courses and four to five desserts.
A children’s option is also available for those under ten, adapted from the main menu or based on the daily suggestion.
