Domitia - Maison de Cuisinier

Our cuisine is based on a rigorous selection of local produce, worked with precision and creativity. The dishes illustrate this approach, with combinations such as Mediterranean denti served raw with caraway, cauliflower and elderberry vinegar, or Camargue bull with oyster tartar and samphire and pistachio pesto. The whole reflects a structured cuisine, with attention paid to the balance of flavors and consistency between products and seasonings. The wine selection follows the same logic, in line with the producers and the region.
The restaurant is housed in a stone building on the ancient Via Domitia, from which it takes its name, in reference to this historic Roman road.
The room was decorated by the painter Hervé Thibault, with frescoes inspired by ancient Rome, giving the whole a strong visual identity. The layout is based on this coherence between place, history and décor.
The whole offers a structured setting, where architecture and artistic elements contribute to the dining experience.
