Set within a medieval building beside the Palais des Papes, this restaurant is led by chef Guilhem Sevin, who presents a modern interpretation of French cuisine with the support of a young and focused team. The terrace overlooks the square, offering a direct view of daily life around one of Avignon’s most important landmarks. The wine list highlights a thoughtful selection of regional and French labels.

Located right next to the south facade of the Palais des Papes, Restaurant Sevin occupies a historic building with a richly documented past. The house was built between 1190 and 1220, more than a century before the Palais des Papes , which dates from 1335. Over the centuries, it served as the residence of several influential figures, including a papal chamberlain, the papal vice-legate and a bailliroyal. In 1791, when the Comtat Venaissin became part of France, the building briefly served as the town's first municipal house. Many features from earlier periods are still visible today. Painted decorations of ermine and lyss flowers are still visible on the walls and ceilings, while the fresco in the main dining room dates from the 15th century.

The house coat of arms above the reception area dates from the 16th century. At some point, the building was abandoned and had to be demolished. The discovery of the historic frescoes led to its protection as a Monument Historique, and its inclusion on the UNESCO World Heritage list linked to the Palais des Papes. The property is part of the architectural complex known as the Vice Gérance du Palais, which was once the residence of the Pope's Vice Legate. After the discovery of the painted decor and traditional French wooden ceiling, two years of restoration work were necessary before the restaurant opened in 1990. The structure remains important to the surrounding complex, as it supports the façade of the Grand Audience and the Grand Chapel of the Papal Palace. A supporting wall, visible in the Petit Salon, bears witness to this structural role. Today, Corinne Sevin oversees reception and room service, while chef Guilhem Sevin manages the kitchen and draws up the wine list to accompany the restaurant's menugastronomy.
