In the world of private dining, few chefs capture the spirit of Provence quite like talented duo Charlène and Coralie.
Known for their beautifully presented dishes, thoughtful seasonal menus, and table settings that look almost too elegant to touch, these two chefs bring artistry and warmth to every occasion. Their story began in the kitchens of Michelin-starred restaurants, where both honed their craft before joining forces to create a concept entirely their own... one that reflects their shared values of authenticity, creativity, and connection.
From fine dining to personal connection
Coralie’s passion for cooking began as a child, helping her grandmothers and later her aunt in her family restaurant. After completing her CAP and Bac Pro in Cuisine, she went on to train in pâtisserie and work alongside renowned chefs such as Jérôme Nutile (Meilleur Ouvrier de France, one Michelin star) and Georges Blanc (three Michelin stars).
Charlène’s journey took a slightly sweeter route. Coming from a family rooted in hospitality, she quickly found her calling in pâtisserie, studying bakery, pastry, confectionery, and chocolaterie before earning her Brevet de Maîtrise. After several years in boutique patisseries, she too joined the brigade at Georges Blanc, where the two first met.
Their shared ambition led them across the globe to the Shangri-La in Sydney, before returning to France to work with Relais & Châteaux’s Castel Clara and a Michelin-starred restaurant in Charente. Eventually, their vision took shape - a private dining experience that blends haute cuisine with the warm, relaxed essence of Provençal life.
A taste of Provence
For Coralie and Charlène, Provence is more than a setting; it is a philosophy. The pair often revisit traditional recipes, infusing them with a modern touch to evoke both nostalgia and surprise. Local produce is central to their craft... aromatic herbs, golden olive oil, and sun-grown Mediterranean vegetables all play a starring role.
“Provence is an equilibrium between tradition and modernity,” they say. “It inspires us to create cuisine that is generous, seasonal, and rooted in authenticity.”

When they are not cooking for others, Coralie and Charlène can often be found at La Bergerie in Capelongue, Bonnieux. They admire its simplicity, authenticity, and focus on local produce. Their recommendation? The wood-fired lamb with seasonal vegetables - a dish that embodies the warmth of Provençal cuisine.
Recipe from the chefs: Velouté de Butternut
Serves six
Ingredients:
- Olive oil
- One butternut squash
- One bouquet of Provençal herbs
- Two garlic cloves
- Water
- Salt, pepper, and a pinch of nutmeg (optional)
Method:
- Peel and chop the butternut, then lightly brown the pieces in olive oil. Once roasted, cover with water, add the garlic, nutmeg, and herbs, and simmer for around ten minutes, until tender. Blend until smooth and season to taste.
- The chefs suggest adding grilled bacon, toasted seeds, or crushed hazelnuts for texture and flavour.
- Chefs’ tip: Before blending, remove a glass of the cooking water. You can add it back gradually to adjust the texture of your velouté.
